Whole30-Day 19

The decision to trust God with our lives and follow His path has been a difficult one at times but very rewarding in the end because it is drawing us closer to Him and strengthening our faith and trust in a God who never fails us. It is one thing to believe God loves you in your mind but another to truly believe it in your heart. It has been my prayer over the past couple of years to truly believe that God loves me just because and not due to anything I do to earn it. It is a truth I am still learning and may continue to learn the rest of my life, but one worth pursuing.

I didn’t wake up early again today, but I did wake up with more energy and a clear head which is a vast improvement over last week. I was even able to sit down with the kids to eat breakfast instead of standing at the stove eating while I packed lunches.

I’m not sure if it is from my workout yesterday or due to the fact that I didn’t have 3 square meals yesterday, but I’m very hungry today! I decided to have a midmorning snack of a banana, egg and almond butter pancake. It is as simple as it sounds: 1 mashed banana whipped with one egg and 1 tablespoon of almond butter. Then you simply cook it in a frying pan like you would a pancake. It is a quick way to pack in some protein and carbs in a filling and fun way. If you are not on Whole30, you can add some maple syrup; but since I am off sugar at the moment, I ate mine with some butter.

The pancake kept me full until about 2:30, so I just nibbled on some raw carrots and celery with almond butter while I helped my son with his homework. For dinner, I looked in the refrigerator to see what options I had on hand and came up with Bacon Acorn Squash Patties from PaleOMG, baked chicken and roasted red cabbage. I don’t typically eat cabbage, but a friend had given me a head of organic cabbage, so I thought I would try roasting it.

I can now say with confidence that “I do not care for cabbage and cabbage does not care for me.” For those who enjoy the taste of cabbage, I suggest this way of preparing it though. The outer leaves were similar to kale chips while the inner leaves stayed soft.
